Blueberries are a true superfood. Their deep blue colour is due to the so-called anthocyanins, which are among the phytochemicals and are powerful antioxidants. They bind free radicals in our body and neutralize them. Free radicals may be caused by, among other things, stress or environmental toxins and damage our cells. This leads to premature aging and can cause cancer. Blueberries are a powerful weapon against these free radicals. But anthocyanins can also help lower blood sugar levels by increasing insulin production.

Blueberries can be easily added to the breakfast cereal. Particularly suitable for diabetics are low-carbohydrate blueberry pancakes: puree one soft banana per person and puree with two eggs in a blender. Bake small round pancakes in a pan with hot oil and add blueberries.
